Grading the Oysters

Before sale the oysters are once again passed over a moving line for a final inspection. They are then packed into 20kg mesh bags, which are stacked on a pallet, labelled and wrapped ready for dispatch. Transport is usually by refrigerated truck in order to maintain a steady temperature and an easy transition from Irish temperatures to a (usually) much warmer France or Italy. Upon arrival at their final destinations the oysters are either relayed in the sea or purified to make them ready for human consumption.
